This is a recipe I made today, and it took me no longer than 10 minutes to prepare! Completely meat and dairy free, but still high in protein and nutrients.
Ingredients:
- 80g (or more if you desire) soya mince (or any other meat free alternative)
- However much wholewheat pasta you like!
- Half tin tomatoes
- TBSP tomato purée
- Handful mushrooms chopped
- Handful frozen peas
- Drizzle balsamic vinegar
- Tsp paprika
Method:
- Start by cooking the mince on a low heat in a bit of water (or oil) until defrosted.
- At the same time, boil the pasta in a separate saucepan.
- Add the tinned tomatoes to the mince, along with the chopped mushrooms and peas and simmer for a few minutes.
- Now add the paprika, tomato purée, dash of balsamic vinegar and salt/pepper if desired.
- Simmer for a few minutes longer until heated through. If you have more time on your hands, leave to simmer for 12-15 minutes for better flavour. If not, don’t worry – it still tastes good!
- Drain the pasta and serve up the Bolognaise. I topped mine with a sprinkle of nutritional yeast for a ‘cheesy’ finish, and a vitamin B12 boost! I also served mine with steamed broccoli for some added greens!
